The Soup Deli/ The Soup Bowl

A new concept of Soup being the central focus in a hot food outlet. This idea came to me in 2005 when I was looking to set up a fresh soup wholesale company. While researching recipes and flavours, I started thinking about soup as a fast food concept. This would offer a wide range of  soups as core products being represented by global influences including Eastern European, traditional soups, Far Eastern, Caribbean & US and European flavours. In addition, sides and toppings would enhance the eating experience and develop the concept into a ‘Starbucks for Soup’ . Truly a global product and appealing across society this is an interesting market. To develop further, a range of sandwiches, salads and POS products to compliment the range.

I have seen a unit which wasn’t available at the time but would be perfect for this in Glasgow:

This natural bowl-like shaped building could be tastefully renovated with a central kitchen area where soups are produced and served. Generous retail space for deli items, with ample room for seating and large windows wrapping round the building where the black area is. If you can imagine a soup bowl and spoon on the roof this concept could really suit a building like this.

Some of the ideas for this project are below and were thought of back in 2005/6 but are still relevant today. With a city centre location this business model could bring a new and very popular eating experience to such a diverse and developing city.

So, with a range of maybe up to 15 soups on any one day covering various styles and global regions to choose from. Customers can then add different toppings, snacks and POS items. This can move into other areas with potential for wholesale and retail packs.

With terrific stats to support daily soup consumption, this business unseen presently on the high street could prove very profitable with high turnover products and great new offerings that cover diverse taste ranges. Bread bowls filled with soup could be sold as well.
